Freezer meal day

So I did another freezer meal day and I decided to post the recipes. When I was looking around pinterest, I was finding a lot of blog posts with freezer meals but they were all jumbled up and some recipes called for cooking the meat first, etc. I am a quick fix kind of person so I went though and found a few recipes that required chopping and mixing - that's it.

Cooking Day

Today I spent about 2 hours cooking. I compiled a few recipes from pinterest and went to work on them. I am thinking that it will last me the next month because we're going to be out of town for a long weekend, and we have stuff for BLT's, mac and cheese, pasta, hot dogs, etc. We also will save days for leftovers because we decided we go out to eat way too much. I am hoping that this stops that, too. A few things to note before you start reading...

1. Onions - Pretty much every time a recipe calls for onions, I use sweet onions. This is for a few reasons. Mainly because I can't cut regular onions. It just makes my eyes tear up like no one's business. Also because I love the taste of sweet onions. So much so that I take bites of it as I'm chopping. Yum.

2. I have not eaten any of these yet but will do reviews and link them here once I have eaten them. I just wanted to get this typed up asap. I am super excited about it.

3. This was fun! I sort of worked fast and some of the recipes did not say if you could freeze them or not so it may turn out well, it may not. Hence the reviews later.


The recipes I used were:

Chili seasoning - This one I am packaging up for myself and using it often. We always have chili. I bought about 5.5 pounds of ground beef and cooked up 1.5 pounds of it for the chili. One pound will be a full batch and the .5 pound I will add more beans/tomatoes to make up for it.

Garlic bread - I bought a bag of 18 small French bread rolls and Dan and I ate 6 of them for sandwiches. So I took the remaining 12 and made garlic bread to freeze. There are so many times when we are eating and wish we had garlic bread to go with our meal. All I will have to do now is pop them in a 400 degree oven and bake them while still wrapped in the foil for about 20 minutes (I individually wrapped each once when I slathered the butter all over the inside.) I had to triple the recipe for all 12 rolls.

Beef Stew - I did not put lima beans into this. It was okay. Dan and I were not thrilled with it.





Crock Pot Pork and Apples - Super excited about this - haven't tried it yet!


Pork Chops - haven't tried these yet either.



Pork chops and peaches - This one takes about 2 minutes to throw together so it will be a last minute one.

On top of all of these, I bought stuff for BLT's a few nights, ribs for 3 nights, chicken wings, meatloaf for about 4 nights.....It should last us a while :)

We also just got back from Texas and I my cousin was telling me about a freezer meal party...I am so looking into this.

DIY chili seasoning

So today I decided to go shopping for lots of meat and cook a ton of food. I have a huge post to put together, but before that, this is what I'm most excited about...

The only thing I changed is I didn't use as much crushed red pepper or chili powder because I am not a huge fan of spicy.

10ish Things I learned in my first year as a mom....

Well, since I've been a mom for a year now, I am a pro (HA!). I thought I'd write up a blog post about all the things I've learned and what I'm excited to learn in the future....

1. I think this is what rings true to all things (this is what inspired me to write this post...) - Stop trying to figure things out. Dylan slept through the night at about 5 weeks old. Everyone always asked me how. And I never had an answer. We were just lucky. Then, (I don't even remember when) he decided he was going to wake up every hour for about 2 months. Was he teething? Did he have an ear infection? Was he stuffy? Was it growing pains? I think I made myself even more exhausted trying to figure it out. Don't try to figure it out. Just deal with it. This too, shall pass.

2. Never say never. There are so many things that I said I would never do as a mom and I find myself doing them all the time. He will never sleep in bed with us, I will never not give him a well rounded meal for dinner (as he is currently eating applesauce, easy mac, broccoli, cheerios, water, and milk), I will never change his diaper in public, I will never nurse in public, I will never let him put his mouth on anything outside of our house....I found myself doing all of these things, and you know what? He's still alive.

3. Hotdogs and peanut butter are not that scary.

4. It's okay to not have the answers. 90% of the time when Dylan is crying, I have absolutely no idea why. None whatsoever. STILL. I thought this would go away as he got older but it hasn't. I always thought I would know exactly why he was crying because I am his mom. This is not the case. And I'm okay with it.

4a. It's okay to throw your hands in the air and say "I quit." You're not actually going to quit being a mom. There are times when I have no idea why he's crying and he's just reaching for something so I keep giving him random things to hopefully pacify him and I fail miserably each time. So I quit.

5. Kids that don't nap SUCK. This would be my child. I know I should be grateful because he sleeps through the night and has for a while but because he naps horribly (40 minutes - an hour and 20 minutes), I get NOTHING done. EVER.

6. Sign language is awesome. Only if your child uses it correctly though. Mine does. It's cool.

7. Register for your baby shower wisely. There are a number of things that I thought I needed and I didn't touch. KEEP RECEIPTS!! Just because a swaddle blanket with velcro worked for one person doesn't mean it's going to work for you. I always give those and pacifiers and pacifier clips now for gifts but I always give receipts.

8. Nursing is a science. It's not as easy as putting your baby up to your boob every 2-3 hours. But don't shy away from it. Once you get the hang of it, it's pretty awesome. It's free!

9. Don't feel guilty if you have someone else watch your kid. I get off of work around 3/3:30 2-3 days a week and I keep Dylan at school until 5 on those days. Why? Please refer to number 5.

10. I could never be a stay at home mom with a baby. Never ever ever. I would go absolutely crazy.


But, I love this guy, and I would absolutely do anything for this sweet little face....

1 year old!

Wow! I officially have a one year old! Maybe even a toddler. I also officially suck at blogging. I haven't posted since his 11 month old one. Oops. I hope to get better.

Now on to one year old Dylan....

*He loves to wave bye-bye. Anytime you say "do you want to go bye bye?" He waves his hands bye-bye ferociously and starts getting excited. If you're standing by the front door, he will point to the car and yell if you're not moving fast enough.

*He loves to give kisses. Now when I say kisses, I mean opening his mouth really wide and lunging at your face.

*He absolutely loves to dance. He will dance when there isn't even any music on.

*He's officially crawling up the stairs and furniture walking. He will walk with one of his walker toys as well. He won't do it very far but he'll do it.

*He is off of bottles. I did that right after his one year appointment. I gave him one more bottle that night and we haven't looked back. It's amazing how much more food he'll eat now.

*He has his two teeth on the bottom and one and a half on the top.

*We are trying to hard to get rid of his morning nap but it's pretty difficult. Sometimes he's the only one at school awake for a few hours because all of his other friends are sleeping and are on one nap a day.

*His favorite foods are: Cheez-its, chicken (but without the breading...weirdo), peas, carrots, applesauce with cinnamon, saltines, still Puffs, maple wheels, pancakes with applesauce (thanks grandma!), milk, BANANAS!!!!!, grilled cheese, tater tots/french fries....

*Still saying "mama" and "dada" all the time.

11 months old

Here we are - one month away from having a one year old! Dylan has changed a lot since last month....

--His schedule is pretty much the same. He has decided lately that 5am is an appropriate time to wake up. I am trying to explain to him that no one will like him if he keeps this up. He's not understanding.

--Pointing. Most of my day is him pointing saying "da?" and then me telling him what is on the other end of his finger. This works in our benefit sometimes because when he is eating, he'll point to something that he wants more of. Or he will point to the bottle warmer when he wants a bottle.

--Still blowing kisses and saying "hello."

--Hearing some semblance of "mama" and "dada." I don't think he understands that I am mama and Dan is dada, but when you tell him to say it, he will.

--He is standing up in his crib, which makes for rough bed times. Usually I will just leave him in there and let him stand up for about 10 minutes and cry - because he can't get himself back down - and then I'll go back in and rock him for about 5 minutes and he's out.

--He's finally in size 3 diapers! Wahoo!

--He has his two teeth on the bottom and I can feel one more ripping through the top.

--He's walking along the furniture. He hates standing. He will scream his head off when he gets stuck standing because he can't figure out how to get down without falling.

--Screaming his head off when Dan or I leave the room.

I took a break and made one of these for a friend so she can document all the funny things her kids say...I decided to add it to my Etsy shop. I also made her something really cool for her birthday but I don't want to post it until after I give it to her!

Kevin comes home!

Vacation Hilton Head

The last week of June we went to Hilton Head with Dan's family. Hard to believe that was a whole month ago! Also (maybe TMI) it was our "farewell to nursing" trip. I decided after the vacay was over, I was going to say byebye to nursing and (more importantly) PUMPING. And I have never looked back.
